I have been trying my very best to stick to a clean diet, that’s not to say I haven’t indulged in a box of girl scout cookies! The easiest way for me to stick to healthy eating is by starting with a protein, usually meat or eggs, and adding veggies. After a few weeks of following this basic meal prepping method I was craving something different. With the rising temperature, I was looking for something fresh, tangy, and easy to prepare.
This is a classic Mexican recipe, Ceviche or “Mexican Cocktail” was so delicious. You can adjust ingredients as desired but here is how we did it.
2 lbs. of cooked shrimp
V8 Tomato Juice
Start by finely chopping the Tomato, Jalapeno, and Cilantro. Dice the avocado into a larger bite size portions.
Layer shrimp and veggies into pitcher or mug.
Pour V8 over veggies, add lime, and refrigerate.
We let it sit for about 5 hours & couldn’t wait any longer. Add additional lime juice as desired and season with pepper and lemon salt. Enjoy amigos!
