These sweet and savory snacks are sure to be a hit with the entire family! There are only three simple ingredients and the fact that they’re baked rather than fried means they are a healthy treat as well as delicious. You’ll need (or at least want) to use a mandolin slicer in order to make the slices thin and uniform in size. If you don’t have one, you can find them online or at most retail stores.
1 1/2 pounds sweet potatoes
1/3 cup olive oil
Kosher salt to taste
Preheat oven to 400 degres. Line several baking sheets with parchment paper and set aside. Use a mandolin to slice sweet potatoes into thin slices. You can use a knife but it will take longer.
Pile sweet potato rounds into a large bowl and pour olive oil over the top. Gently toss to coat every piece with oil. Lay sweet potatoes on baking sheets in a single layer.
Sprinkle the rounds lightly with kosher salt and bake for 20-25 minutes until crisp and golden around the edges. Remove from oven and cool for 5 minutes on the baking sheets. Then move chips to a bowl or plastic bag to store.
